Tres Leches Cake

 Ingredients:

For sponge 

* 1 cup plain flour + pinch of salt , sifted 
* 1/4 + 1/4 cup caster sugar 
* 6 eggs, separated
* 1 tsp vanilla essence 

Milk Syrup 

* 300 ml condensed milk 
* 300 ml evaporated milk 
* 300 ml  milk pack cream 

Topping 

* 1 cup whipping cream 
* 2-3 tbsp icing sugar 
* milk if required

Ganach

* 200 g milk chocolate 

* 200 ml heavy cream 


Method
 
* Preheat oven to 180 C
 * Grease and line a 8 inch round baking pan 
* Beat egg whites till foamy 
*Slowly whisk 1/4 cup caster sugar 
* Keep whisk till stiff peaks form
* In a separate bowl whisk egg yolks with the remaining sugar and vanilla till thick and pale yellow
* Fold in the yolk mixture into egg white mixture gently e 
* Lastly sift and fold in the flour 
* Pour into tin, bake for 20-25 minutes or until done 
* Remove from oven and cool completely 
* Meanwhile combine all three ingredients for syrup together and whisk till smooth 
* Place sponge on a serving tray and poke holes in it 
* Slowly pour in the syrup a little at a time , you do not have to use all of it 
* Refrigerate over night or 5-6 hours 
* Combine cream and icing sugar in a bowl till slightly thick
* Ice cake with the topping 
* Melt chocolate and cream together,cool slightly and pour over cake 
* Refrigerate for another 30 mins to an hours 
* Serve!
